They delivered. It’s got a kick, but I can still feel my face.

I’ve tried a bunch of new teriyaki joints since moving work areas to Lynnwood, but... Nothing has even come close to dethroning the place down the street from me. Tender meat, great seasoning, massive portions... And they have great beef and pork too!

Seriously. One of the things I love about my local Indian place is that, I swear, they step up the spicy a little bit every time I order (I always ask for spicy) waiting for me to back off a bit.

Update: I'm about to cry uncle on their Channa Masala.

I’ve gone through spice  phases. When I was younger I was all about getting it as hot as possible. I've now mellowed out a bit. I want heat, but not if it comes at the expense of flavor.

But I am weak! Though seriously, the Asian restaurants around me are seriously mild  in terms of spiciness. Maybe I should set up a Grubhub account under a Chinese alias and see if I get something with a little more spice.

There is absolutely something to that.  My in-laws are Chinese and we have a close friend who is Indian - through them I can get the real stuff and it’s quite a bit spicier if you want it that way.

My Chinese friends (both ABC and FOTB) have told me that you will get a different recipe as a Chinese person compared to a Euro-looking customer. I’m sure that varies with the restaurant, the region, etc. But it does make business sense. A good Chinese restaurant that caters to a certain crowd and wants to stay in business does well to learn what the crowd expects and give that to them.

I keep sriracha around to spice up my whatever, but it’s always better to just cook the spice into a dish than to add afterwards, just like it’s better to season a dish properly while cooking than to add salt at the table.

I think my stomach is more intolerant of spicy food now than 10 years ago, but god damn do I still love it.

Do you have any idea why teriyaki is such a big thing in Washington (or the Seattle area, whatever)? I’m on board with it (chicken and rice is a winning combo anywhere) but I wouldn’t have expected it to be anywhere in the USA.
